Turkey--Vegetable Soup

So, I have been eating very healthy lately.

It's been so great to lose weight and have so much energy.
I've lost about 12 pounds so far!

This is a take on my mom's hamburger soup that I absolutely LOVE!
I just changed it up a bit, (and I even took a picture for you!)

1 pound of Ground Turkey (browned and seasoned with garlic, thyme, salt and pepper)
2 small zucchini cut up
1 can of beans with juice
1 can of stewed tomatoes italian style with juice
1 quart of chicken or vegetable brothe
1 can of white beans drained and rinsed
10 baby carrots cut up
cauliflower cut up
3 handfuls of baby spinach
2 celery stalks cut up
1/4 of a head of green cabbage
1 onion cut up
2 cloves of garlic
bay leaf
salt and pepper to taste

Add all ingredients into a crock-pot and simmer on high for 4 hours or to cook on the stove top, bring all ingredients to a boil and then simmer for half hour.


This recipe is VERY flexible. Add or take away whatever ingredients you want. If you don't have them all just be creative. If you absolutely hate something it's not necessary. You can also do potatoes or noodles instead of beans.
